When There Is No Sun started its journey 22 months ago when we did an overnight double mash boil. After being tucked away in a Jamaican Rum for almost 2 years, we conditioned it on anaerobic fermented coffee from Fazenda Castelhana farm, Brazil roasted by Sloane Coffee Roasters and to complement it, a big dose of single-origin Colombian cacao nibs.
