Galway Bay – Illuminator

A beefy classic of Southern German brewing. Often overlooked and underrated, Doppelbock is one of our favourite beer styles, and it was about time we brewed one. Illuminator is 7.9% ABV, brewed with Pilsner malt and three types of Munich malt. With a rich and complex caramel character, thanks to a double decoction mash and a two-hour boil, you can expect notes of molasses, raisins, and plums. Delicately hopped with Hallertau Mittelfrüh, fermented with our favourite lager yeast, and then lagered at cool temperatures for over five months for a balanced and smooth finish.
