Balans, dat is waar het volgens ons om draait bij het brouwen van bieren. In de eerste dronk komt dit bier goed zoet binnen maar wordt binnen enkele ogenblikken gebalanceerd door een stevige hop bitter.
Het is net als het lied 'Bitter Sweet Symphony' waar dit bier zijn naam aan te danken heeft. Het lied van 'The Verve'dat het leven beschrijft als de zoektocht naar balans. 'Cause it's a bittersweet symphony, that's life'.
