Cariñena DO Garnacha Blanca

Grape variety/vinification Made from 100% Garnacha Blanca. The grapes are hand-harvested and gently pressed after a skin maceration of approximately four hours. Spontaneous fermentation takes place partly in clay pots and partly in untoasted French barriques. The majority of the wine matures for ten months in clay pots, while a smaller portion continues to age in 500-litre wooden vats with regular bâtonnage. Finally, the wine rests for three months in stainless steel tanks for optimal balance and refinement. Tasting note Light straw-yellow in colour with golden highlights. The nose reveals aromas of white quince, lemon zest, and subtle mineral notes. The palate is full and elegant, with fresh, well-structured acidity. The soft finish is characterised by ripe notes of apricot and a hint of honey. Food pairing Delicious with grilled fish, shellfish and crustaceans, and poultry. Also an excellent choice with creamy risottos, soft cheeses, and Mediterranean dishes with fresh herbs.
