Winemaking

100% Chardonnay van leem- en mergelbodems. De vergisting en rijping vinden deels plaats in roestvrijstalen tanks en deels in gebruikte eikenhouten vaten. Zo komen fruitige frisheid en een zachte, romige structuur samen.

Serving suggestion

Serveer op 10–12 °C in een ruim, tulpvormig wittewijnglas of een Bourgogneglas. Laat de wijn in het glas iets opwarmen, zodat het fruit en de zachte houttonen zich verder ontwikkelen.

Tasting note

Aroma’s van sappige peer en tropisch fruit, aangevuld met vanille, citrus en delicate bloemige tonen. In de mond vol en verfijnd, met een mooie balans tussen romigheid, mineraliteit en frisse zuren.

Food pairing

Heerlijk bij gebakken of gerookte zalm, gevogelte met een lichte roomsaus en romige paddenstoelenrisotto. Ook brie, camembert of vis met een krokante notenkorst sluiten mooi aan bij het volle, verfijnde karakter.

Description

Grape variety/vinification Made from 100% Chardonnay. The grapes are hand-harvested at optimal ripeness in the chalky vineyards of Südsteiermark. Fermentation takes place partly in wooden barrels, after which the wine ages on the fine lees (sur lie). This method provides extra structure, depth, and a subtle creaminess. Tasting note An elegant and refined Chardonnay with aromas of ripe citrus, yellow stone fruit, and a subtle hint of white flowers. The palate is full and mineral, with a beautiful tension, refined oak notes, and a creamy structure thanks to the sur lie aging. The long, fresh finish makes the wine exceptionally well-balanced. Food pairing Delicious with poultry, veal, and refined fish dishes. Also an excellent choice with grilled fish, shellfish, and dishes with creamy or subtly spiced sauces.
