What is cider?
Cider is an alcoholic beverage made by fermenting apple juice. The apple varieties used form the basis for its character. They can contribute aroma, sweetness, acidity, and tannins.
Cider is therefore not beer, even though you often encounter it alongside beer. The basis consists of apples instead of grains. Within cider, you will find diverse interpretations, from light and accessible to dry and complex.
What does cider taste like?
In cider, you may encounter fresh or ripe apple aromas, sometimes supplemented with floral, earthy, or spicy nuances. The taste is determined by the apples, the fermentation, and any further aging.
Acidity can provide freshness, while tannins can add some structure and a slightly astringent feeling in the mouth. Some ciders are soft and round, while others are crisp, dry, or pronounced in character.
Is cider always sweet?
No, cider can be dry, semi-sweet, or sweet. During fermentation, apple sugars are converted into alcohol. The amount of sugar that is ultimately present varies per cider.
Furthermore, a fruity aroma does not automatically mean a sweet taste. A cider can smell distinctly of apples and yet have a dry finish. Therefore, look at the flavor description so that you know what balance to expect.
What is the difference between still and sparkling cider?
Cider can be still or contain carbonation. A sparkling cider has a lively mouthfeel and can come across as extra fresh. With a still cider, you can experience the apple aromas, acidity, and any tannins in a different way.
Carbonation says nothing about the sweetness: both still and sparkling cider can be dry or sweet. These are separate characteristics that together determine the drinking experience.
Which cider suits you?
Do you like fresh, dry drinks? Then look for a cider with a dry finish and lively acidity. If you prefer soft and fruity, a rounder or slightly sweeter variant might fit well.

Cider for food pairing
Cider can also be a great choice with a meal. For example, the freshness of a dry cider can pair nicely with creamy or richer flavors. With a pronounced cider, it is important that the dish also has enough character.
