What is pilsner?
Pilsner, also called pilsener, is a bottom-fermented beer that originated in the Czech city of Plzeň. It is typically clear and golden-yellow, with a crisp taste in which light malt notes and hop bitterness come together.
Pilsner belongs to the lager family. Lager is the broader umbrella term for bottom-fermented beer styles; pilsner is one of them. Therefore, not every lager is a pilsner.
What does pilsner taste like?
The malt can provide light flavors of bread, grain, or biscuit. Hops add bitterness and aromas, which can be, for example, floral, spicy, or subtly grassy. The finish is often crisp and quite dry.
Within that recognizable profile, there are clear differences. Some pilsners are soft and round, with a bit more emphasis on the malt. Others are drier and have a firmer hop bitterness. Because the flavors are relatively subtle, a small change in the recipe can be easily noticeable.
What is the difference between Czech and German pilsner?
Czech pilsner often has a somewhat fuller malt character, with bread-like flavors and spicy hop aromas. The bitterness can be clearly present, but it is supported by the malt.
German pilsner is generally a bit drier and crisper, with a more pronounced bitterness in the finish. These are general directions: every brewer gives their own interpretation to the beer.
Breweries outside of the Czech Republic and Germany also make their own pilsners. Sometimes they stay close to tradition, sometimes they choose other hop varieties that add new aromas.
What is the difference between pilsner, witbier, and weizen?
Pilsner is typically clear and emphasizes malt, hops, and a crisp finish. Witbier and weizen are brewed with a significant proportion of wheat and are often cloudy.
In witbieryou often taste citrus and subtle spiciness, partly due to added citrus peel and coriander. Weizenis more easily recognized by yeast notes of banana and clove and a soft mouthfeel. If you are looking for a crisp beer with a clearer hop bitterness, then pilsner might be a good fit.
Which pilsner suits you?
Do you like soft, round beers? Then look for a pilsner where the malt character comes forward a bit more. If you like dry and bitter, then a pilsner with a more pronounced hop character is a good direction to explore.
Feel free to try two different pilsners side by side. Pay attention to the aroma, the malt flavors, and the bitterness that lingers after a sip. This way you will discover which balance you enjoy the most.
