What are wild ales?
Wild ales are beers in which wild yeasts, such as Brettanomyces, and sometimes bacteria contribute to the fermentation and flavor. They form a broad beer family with diverse characters: from subtly fruity and dry to distinctly sour or earthy.
Brewers can add these microorganisms intentionally or work with spontaneous fermentation. Therefore, "wild ale" does not automatically mean that a beer has been spontaneously fermented. The method and the cultures used together determine how the beer develops.
What does a wild ale taste like?
You may encounter fruity aromas, as well as notes reminiscent of hay, leather, or a farmyard. Beer lovers often call such aromas "funky." In some beers, they are subtly present, while in others, they form a significant part of the character.
In addition, a wild ale can be crisp and sour, dry, or somewhat fuller-bodied. Fruit, the malt used, and any aging in wood each add their own flavors. As a result, there is plenty to compare within this collection.
Are wild ales always sour?
No, wild fermentation and acidity are not the same. A beer with Brettanomyces, for example, can be dry, fruity, and funky without tasting distinctly sour. Bacteria, on the other hand, can contribute to acidity during fermentation.
A sour beer is also not automatically a wild ale. There are various ways to develop acidity in beer. Therefore, check the beer description to discover what fermentation and flavors you can expect.
What does barrel aging add?
Many wild ales are given time to develop further, sometimes in wooden barrels. During this maturation, fermentation and flavor development can continue. The wood and the previous contents of the barrel can add extra nuances.
Not every barrel-aged beer has a clear woody or spirits flavor. For some wild ales, the barrel is mainly about the environment in which the beer can mature. The brewer seeks a balance between the base beer, the fermentation, and the influence of the barrel.
Which wild ale suits you?
Do you like crisp, dry beers? Then a subtly fruity wild ale can be a great introduction. If acidity appeals to you, look for a variant in which that is more prominent.
Are you curious about earthy and funky aromas? Then look for a beer in which that fermentation character is central. Feel free to tell us what you have enjoyed in the past and how much acidity you like. We will help you choose a suitable direction.
