What is saison?

Saison is a beer style with roots in the Belgian farmhouse tradition. These beers are often known for their dry finish, lively carbonation, and fruity, spicy yeast character. The color can vary, and the alcohol content also differs per beer.

Within the saison category, brewers have a lot of room for their own interpretation. Some keep it subtle and fresh, while others opt for more hops, different grains, or additional fermentation techniques.

What does a saison taste like?

The yeast plays a major role and can provide fruity aromas and peppery spiciness. For example, you might encounter citrus, ripe fruit, or light earthy notes. These spicy flavors can emerge from the fermentation process without any spices being added to the beer.

The malt provides a foundation of light bread-like or grainy flavors. Hops can add fresh aromas and bitterness. Together with the carbonation and the typically dry finish, this creates a lively character.

Is saison always light or sour?

Saison is not automatically low in alcohol. There are light, accessible variants, but also stronger saisons with more body and intensity. Furthermore, a dry taste can make a stronger beer seem lighter than its alcohol percentage suggests.

Saison also does not have to be sour. Some brewers work with additional yeasts or bacteria, which can make a variant funky or sour. That is a specific interpretation, not a standard characteristic of every saison.

What is the difference between saison and wild ale?

Saison typically centers on the character of saison yeast: fruity, spicy, and often dry.Wild alesowe their character to wild yeasts and sometimes bacteria, which can provide, for example, earthy, funky, or sour flavors.

The categories can overlap. A saison can undergo additional fermentation with wild yeast and thus develop characteristics of a wild ale. The beer description will help you discover which direction the brewer has chosen.

Which saison is right for you?

Are you looking for fresh and dry with subtle spiciness? Then a classic saison is a great starting point. If you like more bitterness and hop aroma, look for a more prominently hopped variant.

Are you curious about earthy, funky, or slightly sour flavors? Then a saison with wild or mixed fermentation might be interesting. Tell us what beers you enjoy drinking and what you want to discover. We are happy to help you choose.
