You know how some things just work together? The same way Lennon was supposed to meet McCartney, and the way you couldn’t imagine anyone except for Chewie sitting next to Han in the Millenium Falcon, sometimes a hop is just destined to be paired with a certain beer style, and we’ve found that unbreakable bond between Dolcita and our Oat Cream IPAs. Thick, pulpy, and pillowy to the max, Sundown Theory utilises a huge amount of cold side Dolcita to impart a metric tonne of peach rings, caramelised pineapples, and sweet valencia oranges. We’re responsible enough to know that we can’t let a beer wander into cloyingly sweet territory here at Polly’s though, so we’ve accentuated this with a whisper of Talus to bring a balance of subtle pine resin and grapefruit to the party. A beer that was just made and custom built for summer time.
